San Sebastian Inspiration: Pintxos by Foodie-Girl

The perfect bite.  You know the feeling.  When all points on the flavor-spectrum combine, making your tastebuds sing.  There are few things better!  Our time in San Sebastian was punctuated by a multitude of these experiences, all given to us in the form of a pintxos – the Basque version of a tapa.  Each pintxos bar offered up one-to-two bite delicacies that were artfully designed and incredibly well-thought out, leaving us with one food-high after another.  If you’re anything like me and you always want a taste of this, a little nibble of that (driving your friends and family crazy when you are out to dinner) then San Sebastian and the pintxos experience are right up your alley.  Over the past several months since I began this foodie-girl journey, I like to think that I have constructed a few ‘perfect bites’ of my own, one with a Kentucky twist, the other distinctly Italian and a fresh-fish offering sure to satisfy any at-home sushi craving.  So I took a little walk down foodie-girl’s growing memory lane and wanted to share the following small-bite inspired recipes with you!  Follow the links below and enjoy one satisfying bite after the next!

Hot Brown Crostini – A KY favorite in hand-held form!
***I highly recommend roasting a turkey breast (skin on, bone in) and shredding the meat, using it in place of the lunch meat.  Sprinkle liberally with kosher salt and black pepper and roast on 425 for 30-35 minutes or until a thermometer reads 160.  Allow to cool and then discard the skin and shred the chicken, adding it to the mix.***
