How to help asparagus stay fresh longer…

I almost always have fresh asparagus in the fridge.  In reading through my cookbooks I picked up a tip that really does extend the life of this vegetable, creating less waste and helping to buy time while you come up with new ways to use asparagus in your every day dinners.  As soon as you get home from the grocery break off the ends of the asparagus.  There is a natural breaking point.  Just hold either end, bend, and the wooded end will snap off.  Put the fresh cut bottoms in a glass with an inch of water and set in the fridge.  Like a flower, the fresh cut submerged in water will help to sustain the life and offers up a few extra days of time – something I am always happy to find!
